Fresh Apple Cake
4 cups diced apples,
cover with 2 cups sugar. Let sit until mushy. Beat 2 eggs; add ½ cup oil, 2
teaspoons vanilla, and 1 cup chopped nuts.
Sift together: 2 cups
flour, 1 teaspoon salt, 2 teaspoons soda and 2 teaspoons cinnamon. Add to
other mixture. Pour into floured cake pan.
Bake at 350 degrees for
45 minutes to one hour.
Frosting:
1/2 cup butter or
margarine
1- 8
oz. package of cream cheese (soft)
1- teaspoon
vanilla
1
pound powdered sugar
