Fresh Apple Cake

4 cups diced apples, cover with 2 cups sugar.  Let sit until mushy.  Beat 2 eggs; add ½ cup oil, 2 teaspoons vanilla, and 1 cup chopped nuts. 
Sift together: 2 cups flour, 1 teaspoon salt, 2 teaspoons soda and 2 teaspoons cinnamon.  Add to other mixture.  Pour into floured cake pan. 
Bake at 350 degrees for 45 minutes to one hour.

Frosting:

1/2 cup butter or margarine
1-      8 oz. package of cream cheese (soft)
1-      teaspoon vanilla
1        pound powdered sugar

Sharon's Strawberry Cake

White cake mix 
1 pint whipping cream
2 8 oz packages of cream cheese
1 cup powdered sugar
Danish dessert
Lots of Strawberries - I use at least one of the 1 pound containers.
 
Mix cake as directed on box.  Bake in sheet pan for 20 minutes at 350  (I use 3 egg whites instead of 2 eggs to make the cake really white, but it tastes good either way)
 
Whip cream, then add softened cream cheese and enough powdered sugar to make it sweet.  Spread on cooled cake.
 
For the glaze, buy a box of strawberry flavored Danish Dessert or other strawberry glaze and mix according to directions.  When it is cooled , mix the strawberries with your glaze and spread on the cake.

Chocolate Bundt Cake

  • 1 box Dark chocolate cake mix
  • 4oz box Instant chocolate pudding
  • ½ pint Sour cream
  • 4 Eggs
  • ½ c Oil
  • ¾ c Milk
  • 6 oz Semi-sweet chocolate chips
  • ¼ c Hershey’s chocolate syrup (optional – creamy texture)

 Mix all ingredients until well blended. Pour into well greased bundt cake pan. Bake at 350 degrees for 50-60 minutes. Cool in pan for 10 minutes, then turn out on a serving plate. When thoroughly cooled, sprinkle with powdered sugar.

Cherry Almond Coffee Cake

1 C. Sour Cream
1/4 C. Water
3 Eggs
1 pkg.Sour Cream White Cake Mix
2 cans (21oz) Cherry pie filling
1/4 C. Sliced Almonds

Mix sour cream, water, eggs, in a bowl. Stir in cake mix. Batter will be lumpy. Spread on greased and floured 15 1/2 by 10 1/2 jelly roll pan. Drop pie filling by generous spoonfuls onto batter. Bake 25-30 minutes in 350 degree oven. Cool. Drizzle with glaze and almonds on top.

Glaze: Mix 1 1/2 C powdered sugar and 2 TB. Milk.

Everything but the Kitchen Sink or Create a Cake

1 yellow cake mix
Large box Instant Vanilla Pudding
1 tub of Cool Whip
2 cups sliced fresh strawberries
2 cups sliced bananas

You can use any type of cake, filling or pudding.  Example:  chocolate cake, chocolate pudding and crushed Heath bar.
   

1.    Bake cake according to directions on package in 9 x 13 pan.  Cool cake.
2.    Mix pudding according to directions on package.
3.    Cut cake into 2 halves.  Crumble ½ cake into large bowl.  Layer with ½ of pudding and a layer of cool whip.  Top with strawberries and bananas.  Crumble rest of cake and make another layer as before.  Leave just enough cake to crumble for topping.

Chocolate Eclair Cake

2 Small Pkg. Instant French Vanilla Pudding
3 c. Milk
1 Lg. Container Cool Whip
1 box Graham Crackers
1 Container Milk Chocolate Frosting   

Mix pudding with milk and let stand 5 min.  Then mix with cool whip.  Layer bottom of 9x13 pan with whole graham crackers.  You may have to breack some to get them to fit.  Pour half the pudding mixture over the graham crackers.  Layer with more graham crackers and the rest of the pudding mixture.  Layer with more graham crackers (this is the third layer of graham cracker).  Microwave your frosting for about 15-20 seconds to get it really soft.  Pour over last layer of graham crackers and spread it evenly.  Refrigerate over night.
