Meatballs

1 1/2 lbs lean ground beef
1/2 t. black pepper
1/2 t salt
1/2 t garlic salt
1/2 t onion, minced
1 C crackers (or seasoned bread crumbs)
1 egg

Preheat oven to 375.  Line cookie sheet with foil.  Mix all ingredients. Roll into 1 inch meatballs and bake 15 to 20 minutes.  Serve with barbecue sauce or sweet and sour sauce (recipe follows).

Makes 40

Barbecue Sauce
1 C Ketchup
1/4 C brown sugar
1 t. minced garlic
1 T liquid smoke flavor

Combine all ingredients and brush on cooked meatballs.  Heat through.

Sweet and Sour Sauce
3/4 C sugar
1/4 C white vinegar
2/3 C water
2 T cornstarch
2 T ketchup

Cook sugar, vinegar, water and cornstarch until thickened, stirring constantly.

Swiss Meatballs

Mix together:
1 lb Lean Ground Beef
2 Tbsp Finely Chopped Onion
1/3 Cup Quick Rolled Oats
1/2 Cup Milk
1 tsp Salt
Dash Pepper

Shape into 10 meatballs.
Roll in Flour.

Brown on all sides in:
2 tsp oil

Place in casserole dish.

Place in small bowl:
1 Can Cream of Mushroom Soup

Slowly stir in :
1 Can Water

Pour over Meatballs.

Bake at 325ยบ for 1 hour.

Serve with Swiss Rice.
