Cheesy Potatoes

1 c. Mayo
4 TB. Flour
1/2 tsp. Salt
1/2 tsp. Pepper
2 c. Milk
2 c. Cheese

Mix ingredients on the stove on medium. Add cheese last and mix slowly until melted. Slice 4-6 potatoes. Boil to half cooked. Strain and spread in a 9x13 pan. Pour cheese mixture over potatoes and stir. Sprinkle Parmesan cheese on top. Bake at 350 degrees for 60 minutes.

Hot Baked Beans

1 can Ranch style beans
1 can Jalapeno ranch style beans
cut 4 or 5 strips of bacon (use grease)
1/2 onion, cook w/bacon
Add beans and cooked onions and bacon in casserole dish- add 1 Tbs brown sugar, 1/2 catsup, salt and pepper, add garlic powder. Bake at 250 for 1 1/2 hours.

Rosemary Roasted Potatoes

2 pounds small red potatoes
2 tablespoons olive oil
1 clove garlic, peeled and minced
1 teaspoon salt
1tablespoon fresh rosemary chopped

Wash and dry potatoes.  The cut them in half or quarters depending on size.  Combine olive oil, garlic, rosemary and salt.  Toss potatoes and oil mixture.  Spread evenly on a sided cookie sheet.  Bake or roast at 425 degrees for 35-40 minutes.  Or until tender and browned.

You can add other vegetables such as carrot, parsnips, squashes.
