FOUR STAR CHOCOLATE CHIP COOKIES

2 ¼ cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) unsalted butter, softened

¾ cup granulated sugar

¾ cup (packed) light-brown sugar

1 teaspoon pure vanilla extract

2 large eggs

2 cups (12 ounce package) semi-chocolate chips

½ cup chopped walnuts or pecans

½ cup golden raisins

½ cup shredded coconut

   

1.    preheat oven to 375˚

2.    In a small bowl, combine flour, baking soda and salt. Set aside.

3.    In a large mixing bowl, cream the butter, sugars and vanilla.  Add eggs, one a time, beating well after each addition.

4.    Gradually beat in the flour mixture.  Stir in chocolate chips, nuts, raisins and coconut.

5.    Drop by tablespoonfuls onto ungreased baking sheet.  Bake 9 to 11 minutes or until golden brown.  Let the cookies rest on the baking sheets for 2 minutes before removing with a spatula to wire racks to cool completely.  Makes about 60 cookies.
